Serves: 2
Vegan!

Ingredients
2 cups Sunchokes

Step by Step Instructions
  1. Very simple, wash chokes, pat dry, slice in half. Sprinkle chokes lightly with olive oil, salt and pepper, toss to coat. Place cut side down on parchment lined baking sheet and bake at 350 degrees for about 15-25 minutes (time is according to size). The chokes turn out to be CRISPY, MOIST AND THE BEST THING I EVER ATE!!!! I put some in the fridge and the next day they still were crispy sweet!
