Almond Milk & Fig Chia Pudding

Ingredients
15 grams Chia seeds
1/2 cup Almond milk
A small amount of vanilla extract
50 grams Soy yogurt
3 tablespoons Granola (plus some for topping)
4 Figs (plus 1 for decoration)
Fresh mint leaves (for garnish, if desired)
Chopped nuts (for garnish, if desired)

Step by Step Instructions
  1. Combine the chia seeds, almond milk, and vanilla extract in a container, stir them together, and cover the container with a lid. Let the pudding set in the fridge for 2 hours.
  2. Peel and mash 3 figs with a fork, and slice 1 of them.
  3. Put the fig slices onto the sides of a mason jar or glass. Add a layer of pudding, then the granola, then the mashed figs, then the soy yogurt, then the rest of the pudding.
  4. Top with additional granola, fig slices, nuts, and fresh mint leaves as desired.
