Turnip Fried "Rice"

Vegetarian!

Ingredients
2 large Turnips (peeled & chopped)
2 tablespoons Avocado oil
2 large Carrots (peeled & chopped)
1 large Crown broccoli (chopped)
1 1/2 tablespoons Ginger (minced)
3 tablespoons Coconut aminos
1/2 teaspoon Salt
FOR SERVING:
3 Eggs (scrambled)
3 Green onions (chopped)
1 tablespoon Sesame seeds

Step by Step Instructions
  1. Place the turnip pieces into a food processor and process until the turnips reach a rice-like consistency.
  2. Put the turnip "rice", avocado oil, carrots, broccoli, ginger, and salt into a large wok/skillet. Heat the pan over medium-high heat and cook for 8 to 10 minutes.
  3. Add the coconut aminos to the "rice" and stir well. Add the scrambled eggs, green onions, and sesame seeds, toss to combine, then serve.
