Chicken Back Broth

Ingredients
4 Chicken backs
2 tablespoons Apple cider vinegar
Water to cover
OPTIONAL FOR FLAVORING:
2 large Carrots (chopped)
2 large Celery stalks (chopped)
1 medium-sized Onion (chopped)
Fresh rosemary
Fresh parsley

Step by Step Instructions
  1. Put the chicken backs into a pot and add enough water to cover. Bring to a boil, then reduce to a simmer. Skim any scum off the top as it rises.
  2. Add the apple cider vinegar (as well as any additional flavorings you wish to) and simmer uncovered for 8 hours (remove the chicken backs after 2 hours). Remove & retain the meat from the backs for additional recipes if desired.
  3. When the broth has reduced by half, remove it from the heat and strain the broth to remove any food particles.
