Summer Veggie & Sausage Bake

<p>Take all the fresh veggies from the garden, throw in some seasonings and bake. This is a great healthy one-dish recipe that is full of the flavors of summer. Can be a main dish or side. Enjoy!</p>

Serves: Serves 4-6


Ingredients
6-8 New potatoes, quartered
4 Squash (any variety), sliced or cubed
1 Onion, sliced or quartered
4-6 Carrots, peeled and sliced
1/4 cup Broth (chicken, beef, or veggie)
2 TB Olive Oil
2 TB Minced Garlic
2 tsp Herbs (rosemary, basil, thyme, etc.)
2-4 links Smoked Sausage or Brats

Step by Step Instructions
  1. Combine veggies in a 9x13 casserole dish. Stir in broth, oil, garlic, and herbs.
  2. Top with sausages. Salt & Pepper to taste. Cover and bake at 350 degrees for 45-60 minutes, until veggies are tender.
