Marinated Butter Beans and Cottage Cheese

Ingredients
FOR THE DIP:
16 ounces Cottage cheese
2 tablespoons Tahini
1/4 cup Yogurt
4 ounces Crumbled feta cheese
2 tablespoons Water (for thinning)
FOR THE TOPPING:
16 ounces Butter beans (original recipe uses canned)
4 tablespoons Olive oil
1/2 teaspoon Salt
3 tablespoons Chives
1/2 teaspoon Paprika
1/2 teaspoon Oregano
1/2 teaspoon Additional butter beans
Additional chives for topping
Additional paprika for topping
SERVING SUGGESTIONS INCLUDE:
Bread
Pita chips
Carrots
Cucumber sticks
Sweet peppers
Broccoli

Step by Step Instructions
  1. Combine the cottage cheese, Tahini, yogurt, and crumbled feta in a blender or food processor until smooth. Mix in water to thin out the mixture if needed.
  2. Drain and/or rinse the butter beans. Mix the butter beans, olive oil, salt, chives, paprika, oregano, and additional butter beans until combined. Set aside for 30 minutes.
  3. Pour the cottage cheese mixture into a bowl and top it with the butter bean and herb medley. Garnish with additional chives and paprika
